I’m not going to lie to you people; I am an ice cream snob. A regular gelato aficionado. The other notable difference between ice cream and frozen custard is the amount of air in each. Ice cream has 50-90% air, while frozen custard has a negligible 10-20%. And what do they put into all that extra space in frozen custard? Just a pinch of heaven.
